Lavender, Lemon and honey cake : Love bake nourish by Amber rose
SERVE 10-12:
20 cm round cake tin
4 heads of dried lavender
100g caster sugar
225g unsalted butter
225g ground almonds
1tsp vanilla extract
3 large organic eggs
zest of 2 lemons and + 1/2 juice
75g honey
110g polenta
1/2tsp baking powder
pinch of salt

- grind the lavender and sugar
- in the large mixing bowl, cream the butter and sugar until fluffy and pale
- stir in ground almonds, vanilla until combiled
- beat in the egg (one at a time)
- fold in lemon zest and juice, honey, polenta, baking powder and salt
- scrape into the prepared tin and bake for 45 mins
- dusted with icing sugar, or served with Greek style yogurt or cream.
